Dice -3 Peeled Carrots, 1 Red Onion, 2 Celery Sticks, 2 Garlic Cloves and slow-cooked till soft.
Remove from pan turn up heat and brown 4 Shanks of Lamb.
Return veg to pan/slow cooker.
Add tinned tomatoes, enough stock to cover, add 2 rosemary sprigs and a tablespoon of mint sauce.
Slow cook for 3+hrs remove shanks add tbs plain flour to thicken and blitz stew (hides the good stuff from the kids) ??
