It arrives in store as a full loin, on the bone, with the rump and fore rib attatched, before being broken down into a sirloin joint by our team of expert butchers and placed in our dry aging cabinet. Once a the pefect age, it will be taken off the bone in store, trimmed to perfection and cut through for the perfect steak. Ideal for frying, grilling or on the bbq.
